Day One Update


Above is a photo of the enchiladas that I made! Kale Tortilla stuffed with sunflower filling, cilantro, shredded kale, and chopped red bell peppers topped with avocado sauce and and sour creme. OMG they were so tasty. My whole family was eating with me, even my three year old cousin joined in. That really made my day to hear them ask for seconds.

To make the sunflower filling: In a food processor, process 1 cup soaked RAW sunflower seeds with a few tablespoons of lime or lemon juice- I like lime better with this, a little piece of jalapeno pepper (about 1 inch) or some cayenne pepper to taste , 1 clove garlic (minced or chopped), sea salt, and 1 tsp cumin powder. You can stuff this in romaine lettuce leaves, eat it on top of salad, or stuff it in bell peppers or tomatoes or however you choose. Infinite possibilities to be honest. All about your creativity! Oh yeah, soak the sunflower seeds in filtered water for about 4 hours.

So, I didn't have a taste for any sweets. I had another glass of Vanilla Brazil nut milk tonight (slightly sweet) and that was all.

The only thing is that I did not get my exercise in. I was planning to walk 2 miles but did not get around to it. Maybe tomorrow afternoon. Have to get exercise in for fresh air, to stimulate the lymphatic system so that more toxins can be flushed out, and get the blood and everything moving more throughout my body.

I have lots to do and study tomorrow but I am planning to get up early in the morning and start to work on this dish that I dreamed up a few minutes ago: Raw Vegan Samosas with Mango Pineapple Red Chili sauce and marinated veggies. I can see it and almost taste it. They are going to be so colorful! I can't wait

Day One

Soooooooooo, I have decided to detox for the whole month of February. I am actually very very excited about it! I got off to a wonderful start today. I think my biggest challenge of this whole detox will be keeping up with daily blog posts, but I am going to make it my goal to post DAILY. I will include my experience, some recipes, and photos.

I actually started to change my mind and wait until Monday, buuuuut I think it's best I go with my first decision. I know my body will thank me for it. The sooner the better. Plus, cleansing goes much further than just food, and there is still much to be done on a few other levels...more on that later.

So, I am cleansing using all raw vegan food. This is really nothing new for me, as I eat lots of it, teach classes on raw food, prepare detox programs and the food for others as well.

So what is raw food you might ask? Well in a nutshell, it's uncooked vegetables, nuts, seeds, fruits. I have prepared a little article here that goes into more detail. There are so so many ways that the food can be prepared. You can make versions of some of your favorite dishes. You name it, it MAY be possible in a veggie version of course.

Today I had:
1 green smoothie for breakfast (romaine lettuce, pineapple, and 1 mango)
1 glass of brazil nut milk (high in selenium, I'll talk more about that somewhere else, don't want to turn this blogpost into an article)
Moving on....2 bowls of salad with mixed baby greens, pea sprouts, romaine lettuce, celery, cucumber, grape tomatoes, shredded carrot tossed in Fig Balsamic dressing. Salad is usually the LAST thing I eat when eating raw dishes, but it's a nice way to get my greens and chlorophyll in, especially at a time like this. Chlorophyll is really good for cleansing & alkalizing the body and also great for the blood.

So anyway, right now I'm about to prepare some enchiladas with spinach & kale tortillas filled with cilantro and sunflower seed pate, a little shredded kale, fresh red bell peppers, dream cream (aka sour cream), and avocado sauce. I have my raw cacao and dates on reserve just in case I get a sweet tooth, I will make a chocolate shake for dessert.

I felt pretty good today. Pretty energetic. Got lots of water in. It was 69 degrees today! Woo hoo! Sorry to my friends getting all that snow right now, I really am-- but I have to say it was so nice to ride with my sunroof open and my 'fro blowin' in the wind in the middle of winter....I will post photos of the food later!
